This was definitely an insane batch of 12 jumbo layered cupcakes. The process started at 9:30am and finish around 1:30pm. Occasion? My little brother's 14th birthday. He of course chose the most difficult recipe he could find:)
Type: Chocolate covered mint meltaway
Cupcake- Filling-
3oz unsweet chocolate 3/4 heavy whipping cream
1 cup flour 2 tablespoons butter
1/2 teaspoon baking powder 1 1/2 cups semisweet choc chips
1/2 teaspoon baking soda 1/2 teaspoon vanilla extract
1/4 teaspoon salt 1/2 teaspoon peppermint extract
1 stick butter Chocolate glaze-
1 1/4 cups sugar 2 cups heavy whipping cream
2 eggs 4 tablespoons butter
1 teaspoon vanilla 6 tablespoons light corn syrup
1/2 cup sour cream 3 cups semisweet choc chips
1/2 cup water 1 teaspoon vanilla extract
I can't even begin to explain how I did this. Let's just say it involved a double boiler, stand-up mixer, candy thermometer, all the burners on the stove, and my friend Alexa. There was chocolate everywhere. It was pretty ridiculous, but we got it done! In the end it was most definitely worth it. That's what my brother wanted for his birthday, and he loved them.
I've learned that when baking it's a necessity to listen to music, especially 103.9 on saturday mornings. Rihanna, Ke$ha, and Lady Gaga help a lot too:)

Heck yes! I got two thumbs up, a lot of smiling, and basically silence once the cupcakes were served. They were inhaled rather quickly. I was told that they were delicious, realllly good, I really did it this time, fantastic, yum!
I topped them with gold sprinkles. Good stuff, I loved these cupcakes too!
